The Lake Lyle Jarred Fish Page
This page is to show ya all how to jar up fish in a rec-o-pee that can't be beat! Many and many of people have opened a jar of this and could not put it down. I've even seen some quit using crackers and go for it right out of the jar. The recipe was intended for northern pike but we have used many other substitutes such as catfish, walleye, beans and even pork loins - and they all came out great!

The first step, cut one gallon of fillets into 4 inch chunks. This fillet almost fills the board.

I always chop up a nice pile-o-onions. Here I used 3 small yellow onions.

Combine the onions and fish and cover with 1 quart o tomato juice.

Add 1 cup of veg. earl and 1/2 cup of white vinegar

Add 1/8 to 1/4 cup of canning salt.

Ah, then season the heck out of it! ( hint - a shot of hot pepper shake is great! )

Mix her all up.

Bake at 325 for 3 hours... stir occasionally...

Start the pressure cooker - fill about a 1/3 with water.

Start fill'em up. I like to use wide-mouth pint jars.

And there they are. 6.5 pint jars ready for the bath.

To assure a nice solid seal, I wipe the tops arf with a damp cloth.

Then lid'em up. Here's that 1/2 pint jar ( that'll go fast ).

Oh boy.. she's starting to come together. In the basket they go.

..And into the bath.

Lock & Load the lid on the pressure cooker and let her blow some steam for about 5-10 minutes

Then cap her up to build 10 lbs of pressure. Cook at 10lbs fer 1 hour.

She's all done except fer the swallowing.

And good swallowing it is!! Where's the Old Mill?
